INSTANT POT COUNTRY STYLE PORK RIBS

If you are looking for fall apart, tender pork ribs with lots of flavor, you have definitely come to the right place!  This recipe is one of my favorites, and it's based on a recipe my dad created using a boiling/grilling method, but here we are using the Instant Pot and oven instead.  You could easily finish them off on the grill though, if you'd like.  The recipe could easily be changed up with different spices, but I highly recommend trying them at least once exactly as the recipe lays out.  Don't let the cinnamon scare you.  These ribs have such a unique and wonderful flavor profile.  I promise you won't regret trying them as is.  Feel free to use any beer of your choice.  You can also substitute your favorite barbecue sauce, or a homemade barbecue sauce, but a sweet sauce works best for this recipe versus a tangy one.

INGREDIENTS

  • 3-4 lbs of country style pork ribs (boneless or bone-in will both work)
  • 2  12 oz bottles of beer (I like Miller High Life or MGD)
  • 3 tbsp of McCormick Pickling Spice (this is what makes this recipe)
  • 10-15 peeled cloves of garlic, whole or cut in half
  • 1 bottle of BBQ sauce (I love Sweet Baby Ray's Honey Barbecue for this recipe)
  • 1 small spice bag (you could also make one with cheesecloth & cooking twine)

DIRECTIONS

  1. Add one of the beers to the Instant Pot liner.
  2. Add 1/2 of the garlic cloves to the pot.  You will NOT use a trivet for this recipe.
  3. Add the meat to the pot.  You will need to stack the meat in the pot.  This is fine, just try to keep the top layer relatively level.
  4. Add the rest of the garlic cloves on top of the meat.
  5. Fill your spice bag with the pickling spice and tie the bag shut.  Place the bag on top of the meat.
  6. Pour in the remaining beer.  Make sure the spice bag is covered by the liquid.  If it's not, press it down into the meat until it is submersed in the beer.
  7. Close the lid and set the pot for 45 minutes on Manual High Pressure.
  8. After the cooking cycle has finished, allow the pot to naturally release for 15-20 minutes, then manually release the remaining pressure.
  9. Turn your oven broiler on and set to 400 degrees.
  10. Remove the pork from the pot to a cookie sheet with a slotted spoon.  The meat will be fall apart tender, so if you try to use tongs the meat will just fall apart into the pot.  Discard the liquid and garlic cloves.  You could also transfer the garlic to the cookie sheet as well, for an extra treat, and treat them the same as the meat.
  11. Once you have all of the meat evenly spaced out on your cookie sheet, drizzle the meat with BBQ sauce, then use a silicone brush or a spoon to spread the sauce over the meat completely covering each piece.  You can use as much, or as little, sauce as you would like.  I like a lot of sauce on these  ;)
  12. Put the sheet of meat in the oven under the broiler for 5-10 minutes, or until the sauce has started to bubble and caramelize. 
  13. Remove the meat from the oven and let cool for a few minutes and then enjoy!
