I've never been a fan of traditional egg salad or plain yellow mustard, but I love eggs and how nutritious they are. So, I set out to create a healthier version of the classic dish, sans the extra fat, calories, and yellow mustard. I hope you enjoy this new classic as much as I do.
INGREDIENTS
- 1 dozen large/extra large hard boiled eggs, peeled and chopped
- 1/3 cup light mayonnaise
- 1/3 cup plain Greek yogurt
- 1/2 cup stone ground mustard
- 1 tbsp chopped garlic (jarred, not fresh)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- sea salt and cracked black pepper to taste
DIRECTIONS
- In a medium to large mixing bowl, add all ingredients except for the sea salt and black pepper.
- Use a rubber spatula or spoon to gently mix until well incorporated.
- Taste and add sea salt and black pepper until you are satisfied with the taste.
- Can be served alone, in a sandwich, or as garnish. Get creative! You can also garnish with a little extra paprika and cracked black pepper.
For this recipe, you could use store-bought pre-boiled eggs, or you can boil your own. I have used both in this recipe and both are great. Just use whatever works best for you. I recommend jarred garlic versus fresh in this recipe since you are eating it raw. The fresh may be too strong and overwhelming. Also, this recipe is pretty versatile and you can mix it up a bit and use different mustards and spices depending on your tastes. I like to sometimes add some spicy brown mustard to give it a little extra kick, and it's awesome. You could also spice it up with a little cayenne pepper if you are feeling a little saucy;)
