MOM'S BBQ CHICKEN & CHEESE BISCUITS

This recipe was created by my beautiful mother.  Not only is she a wonderful cook, but super creative as well.  As a busy mom of two kids, she was always looking for ways to create meals for us that were delicious, but also quick and easy.  This was one that she made for us, and it was always a hit in our house.  She is nice enough to let me share this recipe with all of you  :)

INGREDIENTS

  • 1 whole chicken, cut up, or 1-2 lbs of boneless skinless chicken
  • 1-2 cups of your favorite BBQ sauce (I love Sweet Baby Ray's Honey Barbecue Sauce)
  • 1 tube of refrigerated biscuit dough (I like Grands Butter Tastin' Biscuits)
  • 1-2 cups grated cheddar cheese (or substitute any cheese you like)

 

DIRECTIONS

  1. Preheat oven to 350 degrees for bone-in chicken, or 425 degrees for boneless.
  2. Generously coat the chicken with the BBQ sauce.  You can do this by hand or toss the chicken in a Ziplok bag with the sauce and toss until coated.
  3. Place the coated chicken pieces in a 9x13 baking dish (I recommend a glass or ceramic dish for this recipe), and spread out evenly in the dish.
  4. Place in the oven and bake.  If you are using bone-in pieces, cook for 40-45 minutes.  If you are cooking boneless pieces, cook for 20-25 minutes. 
  5. Pull the dish out of the oven (and reduce the oven temperature to 350 degrees if you were cooking boneless chicken).  In the dish, push all of the chicken to one side of the pan, but make sure the juices and sauce from the chicken are still on both sides of the pan.  Place the biscuits in the pan on the now empty side next to the chicken, evenly spaced. Cover the biscuits with cheddar cheese.  If you like a lot of cheese, feel free to go heavy on the cheese and even sprinkle some on the chicken if you like.  You can use as much, or as little, cheese as you would like.  Return the dish to the oven and continue to bake for an additional 15 minutes, or until the chicken and biscuits are fully cooked.
  6. Serve and enjoy!
