This is, by far, my favorite pancake recipe. The pancakes are so rich and fluffy you will want to eat the whole batch. I'm drooling right now writing this. If you want to be transported back in time to breakfast with Grandma and Grandpa, family gathered around the table sharing stories, hearts and tummies full of love, then you need to make these right now and share them with your family.
INGREDIENTS
- 1 1/4 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- Pinch of salt
- 1 egg, beaten
- 1 1/4 cup buttermilk
- 2 tbsp melted butter
- 1 tbsp vanilla extract
- 1/4 cup sugar
- Butter for the griddle
DIRECTIONS
- In a medium sized bowl, whisk together the flour, baking powder, baking soda, and salt and set aside.
- In a small bowl, whisk the egg with the buttermilk.
- Add the egg mixture to the dry ingredients, mixing until smooth.
- Add the melted butter, sugar, and vanilla and mix until combined.
- Cook the pancakes on a buttered griddle, or on a skillet on the stove top, at medium to medium-high heat, depending on your griddle or stove. They are ready to flip when bubbles that form on top start to pop. Cook until golden brown on each side.
- Top your pancakes with butter and your favorite syrup and enjoy!
